Honey & Apple Cider

Chicken, Apple and Celery Salad

Preparation Time: 10 mins + cooling, Cooking Time: 10 mins

Serves 4

Ingredients

  • 2 chicken breasts
  • 1 tbsp olive oil
  • 2 apples, cored and thinly sliced
  • 3 sticks celery, diced
  • 1 romaine lettuce, thickly sliced
  • 40 g watercress, leaves picked
  • 6 tbsp Mary Berry Honey & Apple Cider Vinegar Dressing

 

  1. Heat a griddle pan until smoking hot. Brush the chicken breasts with oil and season with salt and pepper, then griddle for 5 minutes on each side or until cooked through with juices that run clear. Transfer to a plate and leave to cool to room temperature.
  2. Slice the chicken into bite-sized pieces and toss with the apple, celery and romaine lettuce in a large salad bowl..

  3. Add the watercress, drizzle over the dressing and toss again until evenly coated. Divide between four plates or bowls and serve straight away.

  4. Cooks tip

    This salad also works well with leftover cold roast chicken, shredded into bite-sized pieces. Try adding a handful of walnuts or roasted almonds for crunch.
