Summer Fruit Pavlova - Layer meringue with lightly whipped cream & strawberries, raspberries and blueberries. Drizzle with pomegranate dressing and garnish with mint.
Roasted Aubergine - Season half an aubergine with olive oil, cinnamon, salt & pepper and roast in the oven for about 25 minutes. Serve the aubergines with feta, pomegranate seeds and fresh parsely. Drizzle over pomegranate dressing to finish.
Pomegranate Swirl Cheesecake - Crush ginger biscuits and mix with a little butter until it resembles wet sand. Place into a cake tin and press down firmly until flat. Mix cream cheese with icing sugar and swirl through some pomegranate dressing, then place the mixture onto the cheesecake base. Allow to chill until set.
Cous Cous Salad - Place cous cous into a large heatproof bowl and add boiling water. Set aside until liquid has absorbed. Add pomegranate seeds, cucumber, mint, parsley, olive oil, feta cheese and toasted pine nuts. Season with salt and pepper. Toss together and drizzle with Pomegranate dressing to serve.
