Sautéd Leeks - With a knob of butter fry the sliced leeks with crushed garlic, fresh chopped herbs and seasoning. Add a glass of white wine, let the alcohol bubble away then stir in 2-3 tablespoons of Mary Berry’s Lemon & Thyme Sauce and a tablespoon of double cream or crème fraîche to thicken. A delicious side dish to serve with roast chicken and creamy mash.
Lemon and Thyme Potato Gratin - Fill a gratin dish with alternating layers of thinly sliced potatoes, seasoning and a drizzle of Mary Berry’s Lemon & Thyme Sauce. Dot the final layer with a few cubes of butter, some grated lemon zest and season well. Bake for 40 minutes in a medium oven until the top is golden brown and the potatoes tender.
Quick Chicken Stroganoff - Fry a finely chopped onion and some chopped streaky bacon or pancetta in olive oil, add some diced chicken breast and fry until the chicken is sealed. Pour in a glass of white wine and let bubble for 5 minutes then stir in some Mary Berry’s Lemon & Thyme sauce and some extra thick double cream, simmer and serve with rice.
